Banana Pancakes with Fresh Fruit

INGREDIENTS

Fresh Fruit

  • 1/2 cup strawberries
  • 1/2 cup pineapple
  • 1/2 cup blueberries

Pancake

  • 2 cups of water
  • 1 1/2 tsp of vanilla extract
  • 2 eggs beaten
  • 1 1/2 cups of sugar free pancake mix or flour (almond flour is our favourite)
  • 1 scoop of unflavoured protein powder
  • 1 medium ripe banana
  • 1/4 cup maple syrup

METHOD

  • Mix 1 1/2 cups of  pancake mix or almond flour with the protein powder
  • Add 2 eggs, vanilla extract, 2 cups of water and the mashed bananas to the flour and protein mixture and gently blend ingredients together.
  • Heat a pan or skillet and gently drizzle some olive oil on top
  • Gently pour 1/2 cup of your pancake mixture into the skillet
  • When you notice the pancake bubbling it is ready to flip and cook on the other side
  • Continue making pancakes until your mixture is finished
  • Serve your pancake with your mixed fruits
